Ingredients:
1 Cup Cooked Rice
1 Cup Cooked, Shredded Chicken
1 Can Drained Black Beans
1 Green Onion*
1/2 Tbsp Chili Powder
1 Tsp Cumin
1/2 Tsp Garlic Salt
2 Cups Shredded Cheddar
Burrito Sized Tortillas
~Sour Cream and Guacamole are Optional
Directions:
1) In a bowl, combine cooked rice with chili powder, cumin and garlic salt.
2) Add cooked chicken, black beans and green onion and stir until well incorporated.
3) Sprinkle some cheese down the center of the tortilla, leaving a border at the top and bottom. Add desired amount of chicken mixture on top of the cheese (I usually put about 1/2 cup of chicken). If you choose to add sour cream and/or guacamole, you can add that now.
4) Roll the tortilla like a burrito, making sure the ends are tucked in securely.
5) In a non-stick skillet, over medium heat, put the wrap seam side down and cook until toasted. Flip and cook the other side. Serve and enjoy!
