Italian Wedding Soup

Ingredients:
2 Cans Chicken and Rice Soup
1 1/2 Soup Cans of Water
1/3 Cup Chopped Onion*
1/4 Cup Chopped Carrot*
1/4 Cup Chopped Celery
1 Clove Chopped Garlic
1/2 Tsp Salt
2 Tbsp Parsley*

1/2 Lbs Ground Beef
3 Tbsp Grated Parmesan Cheese
2 Tbsp Bread Crumbs*
1 Beaten Egg*
1/8 Tsp Pepper

2-3 Tbsp Flour
1 Cup Chopped Tomatoes*

Directions:
1) In a large pot, combine first 8 ingredients, and bring to a boil. Reduce heat and simmer for 10 minutes.
2) While the soup is simmering, make meatballs. In a bowl, combine beef, cheese, bread crumbs, egg and pepper. Roll into 48 meatballs (these are going to be very small meatballs).
3) Roll meatballs in flower, dust off excess, and place in the simmering pot.
4) Add tomatoes and simmer for 10 minutes.
