Ingredients:
2 Tbsp Oil
1 Tsp Salt
1 Diced Onion*
1 Stalk Celery
2 Beaten Eggs*
1 Cup Frozen Peas and Carrots*
6 Cups COLD, COOKED Rice
3 Tbsp Soy Sauce
Directions:
1) Heat oil and add onion, celery and salt. Once softened, add beaten eggs and the peas and carrots.
2) Cover and cook on low for 5 minutes
3) Add rice and stir to combine. Stir in soy sauce, and heat through. Serve and enjoy!
