Buttered Parsley Potatoes

Ingredients:
2 Pounds Small, Red Potatoes (Yukon Golds would work great as well)
3 Tbsp Butter, Cut Into Slivers
1/2 Tsp Garlic Powder
2 Tbsp Fresh, Chopped Parsley*
Salt and Pepper

Directions:
1) You can either remove the skin from around the middle of each potato (leaving some skin at the top and bottom), or leave the skin on. Place potatoes in a large pot and cover with 1 inch of water. Add 2 tsp of salt and bring to a boil. Simmer for 20-25 minutes, or until soft.
2)Drain potatoes and return to the pot
3) Add butter, garlic powder and parsley. Gently toss to coat.
4) Add salt and pepper to taste, and serve.
