Ingredients:
1/3 Cup Chopped Onion*
1/3 Cup Chopped Celery
2 Tbsp Butter
4 Cups Chopped Potatoes
3 Cups Chicken Broth*
2 Cups Shredded Cheddar Cheese
2 Cups Milk
1/4 Tsp Pepper
Directions:
1) Sauté onion and celery in butter until soft
2) Add potatoes and broth, bring to a boil. Reduce heat adn simmer for 10-15 minutes, or until potatoes are soft.
3) Puree the contents of the pot in a blender (or with an immersion blender) and return to heat.
4) Stir in milk, cheese and pepper. Once heated through and cheese is melted, serve and enjoy.
