On our homestead, you can quite regularly hear the “laughs” and quacks from our small flock of Rouen ducks. As adults, this breed of duck looks very much like the wild Mallard. We try to keep our flock at about 6 adult ducks, but each year we look forward to ducklings in the spring. Come fall, we thin the flock back down to 6, butchering mature ducks. We also eat some of the duck eggs. They are very rich, and wonderful in baked goods.
